Quinoa is a great thing to have in your pantry. It is a seed, not a grain, and is gluten-free. This salad is a great way to incorporate it and in-season veggies. It is really easy to make.
Ingredients:
1 cup quinoa, cooked and cooled
1 cup chicken breasts, cooked, chopped and cooled
1 cup frozen or fresh corn, cooked and cooled
1 large tomato or 15 cherry tomatoes, chopped
1 green bell pepper, chopped
1/2 cup cilantro, minced
dressing ingredients:
2 limes, juiced
1/3 cup olive oil
salt & pepper to taste and a pinch of sugar
Mix the quinoa, chicken, corn, tomato, bell pepper, and cilantro in a large bowl.
Mix dressing ingredients together and pour over salad.
Serves about 4.
