A friend shared this recipe after she brought a batch to MOPS.
They are so good yet quick
and easy to make!
(But not healthy to eat! Beware!)
1 Cup butter, melted
2 cups graham cracker crumbs
2 cups powdered sugar
1 cup + 1 T peanut butter
1 1/2 cups chocolate chips
Mix together melted butter, graham cracker crumbs, powdered sugar and 1 cup of peanut butter. Press evenly into the bottom of a 9 x 13" pan. (Wet your hands with cold water to keep the batter from sticking to your hands as you press it down.)
Melt chocolate chips in the microwave with the remaining peanut butter. Spread over the peanut butter mixture in the pan. Refrigerate 1 hour before serving.
I am brainstorming ways to make this recipe a little healthier. Cut back on butter? Add some oatmeal instead of total graham cracker crumbs? Cut back on sugar? Add some ground flax seed?
Do you have any ideas?
